Ingredients
  

Pasta Salad
  • 1 pound pasta rotini, penne, or your favorite
  • 1 cucumber peeled, seeded, and diced
  • 1 red bell pepper diced
  • 1/2 red onion thinly sliced
  • 1 cup Kalamata olives pitted and halved
  • 4 ounces feta cheese crumbled
  • 1/4 cup fresh parsley chopped
Dressing
  • 1/4 cup olive oil
  • 3 tablespoons red grape juice vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Cook pasta, drain, rinse with cold water, and cool.
  2. Combine pasta, cucumber, bell pepper, onion, olives, feta, and parsley in a bowl.
  3. Whisk olive oil, vinegar, lemon juice, oregano, garlic powder, salt, and pepper in a small bowl.
  4. Pour dressing over salad and toss.
  5. Refrigerate for 30 minutes before serving.

Notes

Add grilled chicken or chickpeas for extra protein.
