Pasta Salad Ingredients
  • 1 pound cooked pasta rotini, penne, or your favorite
  • 1.5 cups cooked chicken shredded or diced
  • 0.5 cup BBQ sauce your favorite
  • 0.25 cup mayonnaise
  • 0.25 cup red onion finely chopped
  • 0.5 cup corn kernels fresh, frozen, or canned
  • 0.5 cup black beans rinsed and drained
  • 0.25 cup cilantro chopped
  • 2 tablespoons lime juice
  • to taste Salt and pepper
  • avocado, diced; cherry tomatoes, halved; cheddar cheese, shredded Optional

Method
 

  1. Combine pasta, chicken, red onion, corn, black beans, and cilantro in a bowl.
  2. Whisk BBQ sauce, mayonnaise, and lime juice in a separate bowl.
  3. Pour BBQ sauce mixture over pasta and chicken. Toss to coat.
  4. Season with salt and pepper.
  5. Add avocado, cherry tomatoes, or cheddar cheese if desired.
  6. Chill for at least 30 minutes.
  7. Serve cold and enjoy!

Notes

For a spicier kick, add a pinch of cayenne pepper to the BBQ sauce mixture.
