  • 1/2 cup plain yogurt
  • 1/3 cup avocado oil
  • 4 pieces very ripe bananas
  • 3 eggs eggs
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp confectioner’s sugar
  • 8 ounces cream cheese
  • 1 cup whipped cream homemade or prepared

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mash bananas, then mix with oil, eggs, yogurt, and vanilla.
  3. Stir in flour, baking powder, baking soda, and salt until combined.
  4. Divide batter into two pans and bake for 25-35 minutes.
  5. Make frosting by beating cream cheese, whipped cream, and sugar until smooth. Cool, then layer and frost the cake.

Notes

Use ripe bananas for best flavor and sweetness.
