  • 2 overripe bananas
  • ½ cup canola oil
  • ½ cup milk
  • ½ cup caster sugar / superfine sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups plain flour / all-purpose flour
  • 2 teaspoon baking powder
  • ½ teaspoon salt

Method
 

  1. Preheat oven to 160°C (fan) or 180°C (standard). Grease and line a loaf tin.
  2. Mash bananas, add oil, milk, sugars, eggs, and vanilla. Stir well.
  3. Sift in flour, baking powder, and salt. Stir until just combined.
  4. Pour into tin. Bake for 45-55 minutes until a skewer comes out clean. Cool before serving.

Notes

For extra flavor, add chopped nuts or chocolate chips.
