Amazing Street Corn White Chicken Chili 45 Min

Ingredients
  

Olive Oil
  • 1 tablespoon olive oil
Vegetables
  • 1 large onion, chopped
  • 2 cloves garlic, minced
Chicken
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
Spices
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional) optional
Liquids
  • 4 cups chicken broth
  • 1 15 ounce can cannellini beans, rinsed and drained
  • 1 15 ounce can great northern beans, rinsed and drained
  • 1 cup frozen corn
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped green chilies
  • 1/2 cup sour cream or plain Greek yogurt
  • 1/4 cup shredded Monterey Jack cheese
Seasonings
  • to taste Salt and pepper

Method
 

  1. Heat olive oil in a large pot, cook onion until softened (~5 min).
  2. Add garlic and cook 1 min until fragrant.
  3. Stir in chicken, spices, cook until lightly browned.
  4. Pour in broth, add beans, simmer 15 min.
  5. Stir in corn, cilantro, chilies; cook 5 min.
  6. Remove from heat, stir in sour cream and cheese, season with salt and pepper.

Notes

Garnish with extra cilantro and cheese if desired for added flavor.
