  • 1 lb Brussels sprouts, halved
  • 2 cups spinach

  • 1 lb ground turkey or beef
  • 1 can black beans, drained

  • 1 large onion, diced
  • 2 cloves garlic, minced

  • 1 tsp cumin
  • 1 tsp paprika

Method
 

  1. Preheat oven to 400°F (200°C). Toss vegetables in olive oil, salt, and pepper; roast for 25-30 minutes.
  2. Cook onion in olive oil until translucent, then add garlic, cumin, and paprika; cook 1 minute.
  3. Add ground meat; cook until browned. Stir in black beans, quinoa, broth; simmer 5-10 minutes.
  4. Fold in spinach until wilted. Serve topped with roasted vegetables, cheese, and herbs if desired.
